Garden Recipe: Irish Brown Bread

  • 2 C oats
  • 2 C buttermilk
  • 2 C whole wheat flour
  • 3 T toasted wheat bran or flax seed
  • 3 T toasted wheat germ
  • 2 T brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1/4 to 1/2 stick unsalted butter


  • Mix oats and buttermilk together and let stand in covered bowl for at least 4 hours or overnight (on counter)
  • In another bowl mix remaining dry ingredients
  • Cut the butter into this dry flour mixture until it looks like course meal
  • Add the buttermilk and oat mixture
  • When combined this should be a soft dough
  • Transfer dough to prepared pan and bake at 4250 until bread is dark brown and tester inserted comes out clean…about 40 minutes

Turn bread out of pan and cool right side up.
